Our newest additional to the family is a soft-ripened blue cheese washed in red miso brine. Salty, savory, with an inviting 'blue bite' and a subtle sweet note.

It's spicy, piquant, and so, so creamy. It's delicious sliced on a steak sandwich or served on a dessert cheese board with dark chocolate. It easily can be enjoyed just munching on it alone! This is a favorite between blue haters and lovers alike. Roughly 7.5oz.

Cheesemaker Charlotte decided to name this cheese after a Cryptid, animals who aren't really real but "may have been seen". Like Bigfoot, the Yeti, the Loch Ness Monster, etc. They all originated in Lumberjack Folklore (Likely, MN at one point). These myths are "fearsome critters" which are all animals that derive from North American folklore, that are more humorous than they are scary and all were said to roam the NA Wilderness. We like that detail, as we find blue cheese polarizing to many, but Fillamaloo is such a crowd pleaser, that it's "more humorous than it is scary" perhaps.

"The Fillamaloo flies backwards as it does not care where it's going, only where it's been, and it builds its nest upside down. It's brightly colored with a turkey-like head, long green neck, with silver scales, a black right wing and a pink left wing."

The bright reddish orange rind, streaks of blue, and creamy paste seemed like the perfect homage to our finely feathered friend.
