Welcome to Alemar Cheese. Our home is Mankato, Minnesota, a college town about 75 miles Southwest of Minneapolis.
Minnesota has a long and rich history of dairy farming, and while our output can’t compete with our Eastern neighbor Wisconsin, our milk quality certainly can. And, if it isn’t immediately apparent, great cheese can only be made from great milk. Please click on the "Our Milk" link to find out more.
Artisan Cheesemaking is an art rooted deeply in science. There are a myriad of variables that must be attended to during each make. Every season demands small adjustments, and trial-and-error are not only learning experiences, but occasionally the source of “happy accidents” that yield a terrific result.
